Taught in the second year, this subject aims at teaching BHM students the Fundamentals of Nutrition so that they are able to prepare nutritionally sound menus for the Hospitality Industry. They also study the effect of heat/cooking on nutrients and what are the various factors affecting people's food choices and food habits.
