Food & Beverage Production is the core area of the hospitality industry. Therefore, the curriculum is planned to give an overall exposure. Food & Beverage Production subject is taught in all four years with theoretical and practical inputs. The subject is structured in four modules taught in four different years– Basic Training, Intermediate Training, Quantity Training and Advanced Training covering basic food preparations and bulk preparation in Regional, National and International cuisines.
The department of Food & Beverage Production is instrumental in organising various food festivals, formal dinners, charity events and the Annual Day. The department routinely conducts special training programmes for in-house staff members and special training modules for housewives and professionals in bakery and cookery.
Facilities:
The Department has full-fledged work stations for 25 students for practical culinary preparations, which is then served to the faculty for lunch. There is a separate laboratory kitchen for bakery preparations and a demonstration lab for 25 students.
Activities:
Conduct of Regional, National & International Food Festivals,
organising an All India Level competition, “WGSHA Quest”, incorporating seven areas of competition- culinary skills, food and beverage quiz, menu card, flower arrangement, cocktail and non-edible centre piece competition.
Specialties:
Special sessions of culinary training specialised skills.
